Opening an oyster
To open oysters safely, you’ll need an oyster knife (a knife with a short, sturdy, flat blade), a cutting board or a flat surface and a clean dish towel.

  1. Using the palm of your hand, hold the oyster firmly on the counter in a folded dish towel.
  2. Insert the tip of the knife into the hinge (the pointed part of the oyster); hold the shell down firmly with your thumb to avoid injuring yourself.
  3. Twist the knife blade as you push it inward.
  4. Cut the muscle holding the oyster in its shell.
