Opening an oyster
To open oysters safely, you’ll need an oyster knife (a knife with a short, sturdy, flat blade), a cutting board or a flat surface and a clean dish towel.
- Using the palm of your hand, hold the oyster firmly on the counter in a folded dish towel.
- Insert the tip of the knife into the hinge (the pointed part of the oyster); hold the shell down firmly with your thumb to avoid injuring yourself.
- Twist the knife blade as you push it inward.
- Cut the muscle holding the oyster in its shell.
